Oven preheat
Before baking any food, the oven needs to be preheated to the specified temperature to meet the baking time on the recipe. It takes about time to preheat the oven. If it is insufficient, it may not reach the specified temperature. If the oven is preheated and baked for too long, it may also affect the service life of the oven.
Baking height
To bake things in a small oven, it is basically enough to put the food in, but a medium oven usually contains three levels of upper, middle and lower height to choose from. As long as the upper and lower fire temperatures are not specifically indicated in the recipe, the baking pan can be placed in the middle. If the upper and lower fire temperatures are high and the lower fire temperatures are low, unless the upper and lower fire temperatures of the oven can be adjusted separately, the upper and lower fire temperatures are usually divided by two, then the baking tray can be placed on the upper layer, but still need to pay attention to whether the surface is too burnt at any time.
Food too burnt
Small ovens are more prone to over-burning. At this time, a layer of aluminum foil can be covered on the food, or the oven door can be opened slightly to dissipate heat. Medium-sized ovens have enough space and can control temperature. Unless the oven temperature is too high, too close to the fire or baked for too long, it is less likely to be burnt. The medium-sized oven can control the temperature when the furnace temperature is uneven, but it is still difficult to compare with the professional large oven. Take the production of Chinese and Western snacks as an example. Since the temperature of the medium-sized oven is not as stable as that of the professional large oven, more careful attention must be paid to the change of the oven temperature during baking. The snacks must be turned around or cooled in due course to avoid uneven expansion on both sides of the cake or bread, or some biscuits are too scorched and some are not ripe.
